Turkey Tacos & Pickled Onions
Michael and I love Mexican food but sometimes, when we eat out for Mexican, it is just too greasy and salty. We end up making this healthier version at home instead. This recipes serves two but is easily doubled.
Turkey Tacos with Quick Pickled Red Onions
Ingredients
1 small red onion
2 tbsp sugar
1 tsp salt
1/4 cup of water
1 lime
Taco Spice Mix - (2 tbsp chili powder, 1 tbsp cumin, 1 tsp onion powder, 1 tsp garlic powder, 1/2 tsp oregano, 1/2 tsp paprika) - or Store Bought Mix
1/2 lb ground turkey
1 tbsp canola oil
1/4 cup of water
6-8 tortillas or hard shells
Toppings - ( may include tomatoes, avocados, lettuce, cheese, cilantro, lime, mango, etc)
Hardware
1 Knife and cutting board
1 non stick pan
- Put onion, sugar, salt, 1/4 cup of water and juice of half a lime in the pan. Turn heat to high and boil, stirring occasionally. Cook until liquid is reduced and sugar is dissolved. Put into heatproof bowl and set aside for serving. Wipe pan out once cooled.
- Turn stove on to medium, and heat oil until hot. Add ground turkey and brown the meat. Next sprinkle taco spices and 1/4 cup of water and cook until water is evaporated and turkey is cooked through. Stir occasionally. Put aside to serve.
- If using tortillas, rinse and wipe pan again and add 1-2 tortillas until soft. If using hard shells, heat in oven per packaging recommendation.
- Wash, slice, chop and/or prepare other preferred toppings.
Things to consider: If you are making the taco mix per above, the quantity is enough for multiple times. The general guideline for taco spice to meat is 1 tbsp to 1 lb but I prefer 1 tbsp to 1/2 lb. Depending on how seasoned you like the meat, anywhere in between should work out.
